What makes The French American Bakery Française, yet coevally Yanqui doodle dandy? Fondée depuis 7 August 2021 by Siti Aishah, a trained pâtissier who had heretofore stinted at Raffles Hotel, Les Amis Group's (now sleeping with the fishes) Canelé Pâtisserie as well as At-Sunrice GlobalChef Academy, this Muslim-friendly fournil pertinaciously eschews either alcohol or gelatin, nevertheless fetishizing premium demi-sel butters from Président and Lescure.

Be apprised The French American Bakery's existing quartet of boutiques — Haji Lane flagship included — does strictly takeaway only.

What knocked our socks off:

The fanciable pompadour of an Almond Croissant was every bit worth augering into - bien beurré, ultra-flaky, prima donnaed with some schmick crème d'amande. Then again, absolute praise must go to the Kouign-Amann, possibly the apotheosis of all kouign-amanns we'd tried till date. Ascribed one lurid Bordeaux red, said Breton pastry simultaneously feated untrammelled candiedness, galactically chewy-crisp plus just the right degree of suety.

In comparison, the draggletailed guttersnipe that's the Chocolate Coffee Roll felt (kinda) stilted initially; even so a lasting rich, onctueux cocoa cum espresso penetralia later got us backpedalling.
